Noodle salad with peanut sauce

A balanced, healthy and, above all, delicious meal for lunch or dinner!

Ingredients for the salad :

  • Rice noodles

  • 100 g edamame

  • 100 g red cabbage

  • 1/2 lemon, squeezed

  • 2 spring onions

  • 1 cucumber

  • 1 mango

  • Fresh coriander

  • Fresh mint

  • Salt

Ingredients for the sauce :

  • 2 tbsp. InShape Nutrition peanut butter

  • 1/2 lemon, squeezed

  • 1 tbsp. fresh ginger

  • 1 tbsp . rice vinegar

  • 1/2 tbsp. agave syrup

  • 1 tbsp. tamari sauce

  • 3 tbsp. hot water

  

Preparation:

  1. Prepare the rice noodles according to the instructions on the packet.

  2. Prepare all the ingredients and make the sauce.

  3. Once the noodles are cold, mix them with all the ingredients in a large bowl.
